With a tangy kick from apple cider vinegar, this Shallot-Dijon Vinaigrette adds incredible flavor to simple salads and beyond. Adapted from Sunset Magazine. Makes about 1 1/3 cups.
- 1 large shallot minced (about 1/3 cup)
- 1/2 cup apple cider vinegar
- 4 teaspoons Dijon mustard
- 1 teaspoon salt
- 1/2 cup olive oil
In a small bowl, combine minced shallot, apple cider vinegar, mustard, and salt.
Whisk the ingredients well until thick and emulsified.
While whisking vigorously, add the olive oil In a thin, steady stream, whisking until well combined.
