Sweet Potato Muffins with Candied Ginger

Ingredients

  • 1/2 cup candied ginger chopped finely
  • 1/4 cup vegetable oil
  • 1/3 cup molasses
  • 1/2 cup packed brown sugar
  • 1 3/4 cups mashed sweet potato roasted (about one large)
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup rolled oats
  • 3/4 cups whole wheat flour
  • 1 cup unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cardamom

Instructions

  • In a large bowl, mix ginger, oil, molasses, brown sugar, sweet potato, eggs, buttermilk, and oats until well combined. Set aside.
  • Mix remaining ingredients in a second bowl, and then combine the two, mixing gently until well blended.
  • Spoon the batter into greased muffin tins and bake at 375° F until firm and lightly browned around the edges, about 25 minutes.
