Sweet Potato Muffins with Candied Ginger

Instructions
In a large bowl, mix ginger, oil, molasses, brown sugar, sweet potato, eggs, buttermilk, and oats until well combined. Set aside.
Mix remaining ingredients in a second bowl, and then combine the two, mixing gently until well blended.
Spoon the batter into greased muffin tins and bake at 375° F until firm and lightly browned around the edges, about 25 minutes.
